My mom makes this amazing chocolate-peanut butter fudge. One bite brings me right back to childhood. I don't think one batch ever lasted more than a day, two at the most! It has a unique taste, not really like other fudge recipes. It's easy because you don't need a candy thermometer. Hopefully it's not a "secret recipe", since I am about to share it. But you can keep a secret, right?
Ingredients:
~Chocolate Cook and Serve Pudding (the bigger box)
~3/4 cup white sugar
~3/4 cup brown sugar packed
~1/2 cup whole milk (do NOT use low fat or skim milk, the fudge won't set up)
~3 tsp. peanut butter
Directions:
Combine pudding, both sugars, milk. Blend well. Cook and stir over low heat until sugar is dissolved. Continue cooking without stirring to full boil. Boil for 3 minutes. Remove from heat. Add peanut butter. Beat by hand (I use a whisk) until thickened and starting to set up. It takes about 12 min. Spread onto 9X9 greased pan and chill. Cut and serve and enjoy!
